Cheesy Chicken Enchiladas

What's for dinner? The dreaded question I repeat to myself daily anywhere around 4pm to 9pm!

Tonight it's Cheesy Chicken Enchiladas, EASY Cheesy Chicken Enchiladas mind you. And they're delicious.

Ingredients:
1 small onion, chopped
1 1/2 Cups shredded chicken
* I boiled 3 large frozen chicken breasts and Cut them into chunks*
3/4 Cup Shredded Cheese
16 oz. Salsa
4 oz. Cream Cheese
8 Floured Tortillas
Salt and Pepper to taste.

Preheat oven to 350.  Spray 9X13 inch  pan with cooking spray.

Add Chicken and onion to skillet, I added about a TBL butter, cuz butter makes everything better.
(or you could cook onions a little bit first and then add chicken)

Cook 2 or 3 Minutes

Add Cheese, cream cheese and 3/4 cup  Salsa. Heat and Stir until cheeses are melted.




Spoon about 1/3 cup chicken Mixture down center of each tortilla, roll up and place in 9X13 pan, drizzle remaining 1 1/4 cup salsa. Sprinkle with remaining cheddar cheese and cover. Bake for 15 minutes or until heated through and Cheese on top is melted. ( I added more cheese before I rolled up the tortillas. Mmmm! I wish I would have salt and peppered them at this point...next time!)




 My son is a super Picky eater and he Loved these!


Yay! Now I don't have to worry "what's for dinner" for another 24hrs!
